Organic Green Gardens

How much produce will I get?

How much produce will you get out of your Garden?

We use the 'Square Foot System', where in general, most plants are allotted a square foot of space. Tomatoes, Cucumbers and Squash require a bit more space. These numbers are based on the system we use to plant your garden. They represent the total harvest of the season for the plant(s) in the space *if there are optimal conditions for each plant.*

Expected garden yield per square foot of space.

Snap Bean: 1/4 - 1/2 lbs.

Cucumber: 1 - 2 lbs.

Eggplant: 1 - 1/2 lbs.

Lettuce: 1 -3 heads

Peas: 1/4 - 1/2 lbs.

(Bell) Pepper: 1 - 1 1/2 lbs.

Radish: 1/4 - 1/2 lbs.

Spinach: 1/4 - 1/2 lbs.

Tomatoes: 3 - 4 lbs.

(Cherry) Tomatoes: 4 - 5 lbs.

Harvesting Lettuce

These two heads of lettuce were harvested with different methods. The first pictures show harvesting by cutting the middle bunch of leaves off the plant, while leaving some outer leaves. The head can then grow back.

This second head is harvesting by taking individual outer leaves from several different plants. The final image in the set shows the plant a little less than two weeks after the harvest. I usually use this method on plants with less leaves or are a smaller plant.

This harvest shows 3 'heads' of lettuce harvested using the first method and some leaves of other plants using the second.
